Armoracia rusticana (1 qt) | Horseradish (1 qt)

Herbaceous. 5 ft. Sun to Part Shade.

Horseradish has large, coarse, dark green dock-like leaves and small white flowers in summer. Does best in full sun with average water and fertile soil. It will not produce as well in shadier areas. Horseradish can be invasive because it grows vigorously from pieces of root not harvested each year, a good reason to grow in pots! For strongest flavor, harvest in fall, after first frost if possible. Harvest main root and replant side shoots to propagate. Roots can be harvested at any time for fresh use, best within a year of planting.

Horseradish is both culinary and medicinal. It is used as a milder replacement for Japanese horseradish, Wasabi, due to its spicy hot flavor.
